I just made Pita Tostadas with Butternut Squash, Black Beans, & Avocado this weekend. I found this recipe on CamilleStyles.com. My picture does not look as good as it does on CamilleStyles.com but it sure was tasty! It was delicious, easy and healthy! What more can you want? Because I can never have enough vegetables, I served it with a salad. :)
This can easily be a week night recipe by making the butternut squash ahead of time. Give it a try!
